Have y'all ever tried venison sloppy Joe's? Sounds good! Been a long time, but yes and they were good. We pretty much use it to replace ground beef. Ended up making the lasagna last night, it came out great! 2 lbs ground venison 1 diced onion 2 small or 1 larger jar spaghetti sauce tub of ricotta cheese shredded motzzarella cheese salt pepper mixed Italian seasoning Brown the ground meat with onion, season with salt pepper and Italian seasoning. When browned mix in the spaghetti sauce. Layer in 9x13 pan first meat/sauce, sprinkle of motzerella, noodles, ricotta and then repeat about 2-3 times depending on depth of your dish. Last layer should be meat/sauce with a heavy sprinkle of shredded motzerella... man I don't know how to spell motzerella! Backe for 45 min at 350 or till noodles are soft.

I mix mine with just a bit of pork sausage, a little. Add diced raw bacon and diced deveined jalapeņos. Make into patties for burgers and cook over mesquite.

I tell people that I haven't bought ground beef in years and I do get some funny looks sometimes! It sure is a good feeling to know where it all came from. Tacos sure sound good right now
