I'm taking my son on an axis hunt in late April.

I'm looking for recommendations for meat processing. We haven't done a lot deer hunting over the past couple years,...spending too much time bird hunting and fishing.

In the Houston area I say R&D in Spring or Jackson's in Crosby.

Does Jackson's and R&D guarantee getting your deer back?

Not sure I never worried about that axis is pretty distinct as far as taste compared to whitetail fallow etc it never crossed my mind either place would do that my elk and stag I gave them was and is elk and I never have felt short changed there either my freezers don't lie.

I have used places in bandera and when I got my deer back it was in 2 small boxes. That's when I scratched ny head

Not sure what part of Texas you're from, but Ed Cernoch's Custom Caterers located outside of Rosenberg processes deer year round. I've taken a few axis deer to him during the summer months. He's a little on the pricey side, but he does a great job and processes each deer individually. He doesn't mix your deer meat with someone else's.

They do as good of a job as anyone in Houston. Great people.

Just remember, axis meat is considered fat-free by the USDA (no enough fat to meet minimum 1%) and has less cholesterol than skinless chicken (really low).

So if you are having hamburger grind, make sure they DO NOT ADD ANY (pork/beef) fat to the meat when grinding, or you simply negate all the health benefits and the meat will taste more like beef/pork (since fat is what holds most of the flavor).

Ainsworth is also good, he has one in Crosby as well, as far as Jacksons I always get my same deer back I can tell for sure because I usually hunt exotics....any processor that's not giving you your animal you killed no matter how busy is practicing bad business...I surely would not go to because you don't know how others handled there meat before it got there.
