Nice! Can you tell me how you smoked the hams? We are planning some pig hunts in the next few weeks and I want to smoke some hams and front shoulders. Did you inject them, or just season them up? And how did they turn out?

Injected and brined them in Morton quick cure for 3 days, then soaked them over night in water, seasoned with Coopers rub and smoked them for around 8 hours. Wrapped in foil and into the oven until time to serve.
I usually rub the shoulders, smoke and/or in the oven until they get to 180 degrees. Then pull off the bone.
