Gonna have to try jerky some time as I love that as well. I had a good year this year and put 5 deer in the freezer and with size of our northern whitetails that works out to just over 350lbs of meat. So I have some to spare.
thats alot of jerky!! It's not all going to jerky. Here's the current breakdown: 110 lbs sticks 70 lbs Octoberfest Sausage 70 lbs Medium Italian Sausage 100 lbs Roasts, Chops, Steaks, Backstraps 80 lbs ground Adds up to more than 350 but it includes pork added to make the sticks and sausage. Not actually sure if I can thaw frozen venison and then use for jerky.

Not actually sure if I can thaw frozen venison and then use for jerky. why would the frozen stuff not work for jerky??

I will post up my recipe for jerky in a few days to share. It is like gold in our house. Even my wife takes some and hides her a stash before it is gobbled up. I found her stash by accident one time and confronted her. She looked like the deer in the head lights. It was funny.

Yes you can use frozen. That is actually the best was to slice it. Put it in the fridge frozen to thaw slowly. When it is still just barely frozen take it out and slice it while the meat is still hard. Slices much easier this way, and more consistent on your thickness.

Than again I could easily be remembering it wrong as that was 30 years ago. Even if she did believe that, I guess it could be an old wives tale from the old country.

Well now you have to post your Octoberfest Sausage recipe!!!!  Please lol Recipe/Instructions - Oktoberfest 8 lbs. Pork butts 12 lbs Venison 4 cups milk 6 Tbs. salt 4 tsp. Prague powder (optional) 1 Tbs. mace 8 tsp. white pepper 1 Tbs. nutmeg 2 tsp. ginger 4 eggs 4 cups powdered milk Grind meat through a fine plate. Mix spices together and add to meat with the rest of the ingredients. Mix well. Stuff into hog casings. Link and place in simmering water for 20 minutes. Remove and cool under cold running water until cool to touch. Separate the links and package.
