I have heard it tastes like elk. Has anyone ever had it that can tell me if its good or not? I did not shoot any deer this year and I am thinking about shooting a stag for some meat.

The Red Deer I took this year wasn't much better than WT. Axis trumps it to me.

Red Hind is much better than the stag. That's like comparing whitetail doe and buck. But red deer meat is very flavorable, but like all venison, is also very lean.

Depends on what they been eating,
Sage flat-going to taste sagey Ceder going to have a hint of cedar
Over all stag is very similar to elk

It's really good to eat. If you ever go to a German restaurant, look for something called "Hirsch goulasch" or "hirsch rouladen". They are excellent table fare.
Korea is nothing like Germany, and no amount of Army Modernization propaganda will convince me otherwise. I miss my wife and kids something fierce

Red deer meat is excellent. We have them here on our East Texas ranch, so it is often on the menu. When, properly cooked both the stag and hind meat is delicious eating.
Will be having some hind meat hunts available soon.
