I fry almost everything in a tempura style batter: 1/2 cup AP flour, 1/2 cup corn starch, 1 cup of liquid (water for basic) 1 tsp salt.

I like to sub some of the water for soy sauce, worchestershire sauce, hot sauce, maybe a little liquid smoke, yellow mustard would go really well with the shrimp (or seafood in general). You can experiment and add other seasonings (powders and the such). Sky is the limit.

My advice would be too look for a texture when you combine your ingredients rather than strictly measurements. You want it thin enough that it is easy to cover your meat, but you want it thick enough that it will stick to the meat when taken out. I like to let my stuff kind of marinade in it while I prepare my other stuff. You will want to add pieces one at a time once most of the excess drips off and dont add more than probably 10 pieces, depending on size, at a time so that your oil dosent drop in temp too much. It shouldnt take long, few mins until golden brown and then remove and let drain on paper towls for a bit. Hope this helps, enjoy!

I like panko, if you mix panko and flour you can get a nice breading with crunch

1/2 cup oil
1 egg
1/2 cup milk
1 tsp season salt (I prefer Bill's from San Saba)
1/4 tsp sea salt
1 cup all-purpose flour

combine oil and egg, beat well. Then add remaining ingredients and blend well. peal & devein shrimp (about 1.5 lb), dip into batter to coat and drop in hot oil ...

Long john silvers style batter. Note: I exchanged the salt with 5x the amount in Cachere more spice and another 2tsp of regular salt. With only the 1tsp salt it is not good and tastes nothing like LJS. the more spice adds a little zing to it.
