I really enjoy the taste of a good duck but the gys I hunt with don't really care for it and usually save all of them for a gumbo at the end of the year and it isn't really good. I know I really like teal but I have never eaten any big ducks. Which big ducks taste the best and which ones should I avoid?

I'm not picky, I think all big puddlers taste a LOT alike and there aren't any I'd avoid. Where they are taken, which implies what they're all eating, seems to be the bigger factor (unless you're talking spoonies, but I don't mind them either). My two cents: 1. Woodie 2. Mallard 3. Wigeon 4. Pintail 5. Gadwall Avoid divers and coastal spoonies. I've heard coots are awesome, but I've never tried one...

As a general rule, puddle ducks are better table fare over divers (fish eating ducks). But this is not always the case. For example, shovelers are a puddle duck, but many do not like them, I am one. I shot and ate a bufflehead last year, Im pretty sure that is a diver, I thought that duck tested excellent.
But I think teal are your best tasting duck, then probably wood duck, then mallard, gadwall and widgeon, these are all good ducks to eat. I have never had a pintail, but think they are at the top. I have never shot a canvasback, but my understanding those are great ducks to eat, they are divers

Getting the blood clots out are very important, as well as any feathers. I also brine all my ducks in salt water for 24 hours, this does something magical to the meat to help it hold moister, below is good info on how that magic works..

Like Guy said, Brining is key.
First time I had duck, i just let it sit in water (no salt) for about an hour, used some olive oil and some spice, and made some brochettes (sp?). They were pretty gamey, although tolerable.
The next time, I soaked the breasts in saltwater for the whole day and it made a WORLD of difference.
Thats the thing about life, nobody gets out alive.

Actually most "divers" Dont eat fish they dive down and eat plants that grow deepeer than the puddle ducks cant eat. Example Canvasback it prefers tubers an and root stock and its latin name is based on the prefered food it eats Vallisneria a deep water growing plant. It is all about the Prep work that you do wether thats soaking in orange juice or brineing in salt water. My personl prefernce theres not a bird out there better than a woodie, id take 5 of them over 5 mallards if i could.

I'd say most of the time people just cut the breasts out.

I just killed my first 2 ducks last night, a pair of gadwalls, and I'm soaking them in milk for 24 hours before freezing them. Aside from soaking them in brine for 24 hours before cooking, anything else I need to do? Do I still need to brine them since I've soaked them in milk?

after i soak my duck breasts,i put them into a marinade called "Allegro" for about 6 hours and add minced garlic. It is the best marinade i have ever had.

Dont worry i wont let Allans dog make his advances on me like he did to you.. Not saying never but there diet does not consist of mainly fish like most believe, theres a few that do like the mergansers that eat fish but, most your divers eat plant material like other ducks and invertebrates.

Best way to cook duck is to simmer it in crawfish boil for about a hour in a half or two hours. But this needs to be a whole duck plucked and gutted not the breast meet cut off the bone

Every duck i shoot i marinate in Italian dressing for about a day then i use a little bit of jalapeno and then wrap in bacon and grill it. It has never tasted bad to me

here we go again with the ducks eating fish debate. ducks dont eat fish as a main diet. sure they eat them inadvertantly, and occasionally, but mergansers are the only true fish eaters.
I like spoonie, his humor is dryer than my duck lease.
