yes you can...... during the bust.....alot of people released their birds since there was no market for them....
they are not a game animal so you can shoot them.... Had a buddy kill 2 around colorado city few years back....

A friend of mine roped one a few years ago outside of Brownwood and had it made into summer sausage and jerky . It was goood !

I've tasted them prepared like a roast and they are more similar than you think. Very little meat.

it CAN be very tough, lots of tendions & sinue(sp?) but if you grind it up, its like beef/venison...cant hardly tell the diffrence...good luck on shot placement, god help if one catches you out & decides to chase...they have a long toenail in each foot that is like a razor

my brother used to raise them ..we cut one into cubes and scewered it over a mesquite fire...man it was excellent...

True story: We raise emus, not on purpose but because we ended up with 'free' ones from parker county, and had one male raise his babies. I have made (a little) money from selling the eggs on EBAY. The problem with all the animals on our place is, they go , well, 'goofy' once they come thru the front gate, and the emus are no exeption. They lay down and expect you to scratch them on the head and neck. We were packing to leave for a wedding of a friend's eldest, and didn't realize that one of the silly things was laid down right in between the front wheels and back wheels of Randall's F250. BUMP BUMP dead emu. They DO NOT like guinneas, and are afraid of big tom turkeys, although the hen turkeys are in love with them, don't know why.

my uncle shot a few a few years ago, and he siad they ate good the first time you eat them, but when you reheat them meat it tastes like crap.

There's a ranch east of Del Rio I used to guide on that has Rheas left over from the bust. They have exploded in population over the years and are considered below a racoon on the desireablility scale. The ones we shot, and opened up, had big old long worms in them. Nasty looking things. We never did try to cook them. If you can find a nest the eggs can be cleaned out and make pretty cool Easter Eggs for you artsy craftsy folks. Maybe Rheas are different than emus, but nobody I know ever had anything good to say about the meat besides it had worms. Most said it was oily.
