For the Super Bowl last year we got one backstrap and a hind quarter deboned. We filled it and put cream cheese jalapeos and wrapped it up in bacon. We cooked it for about 1 hour for the backstrap and 2 hours for the hind quarter smoked.

Doctor it up like you were cooking a steak and throw it on the grill. I cooked one tonight and it was great.

Coke, orange juice and pineapple juice are all good tenderizers and marinades especially for pork and chicken. Most of the really good recipes for making carnitas use coke or orange juice or both, I have experimented with root beer and Dr pepper as well and have had good success. Pacific Islanders use orange juice and pineapple juice. Some of the best pork BBQ I have had was prepared by a pair of brothers from Guam and a whole hog on a spit by some guys from the Philippines.

By the way if you decide to try coke use the coca cola from Mexico as it has real sugar and better flavor its actually the real coke.

Swerving off topic but I brine/marinate wings in pineapple juice and a can of chipotle chilis (in adobo sauce) overnight. Them I grill em. Try it.

Just cooked this for supper tonight. Cut whole backstrap into 3 pieces and cook in crockpot with water, garlic, salt, pepper, cayenne pepper, and some chicken fajita seasoning. Cooked for about 5 hours with green beans and cubed new potatoes.

Try curing your own Canadian Bacon. You just have to brine the backstrap (loin) for a couple of days in the fridge and then smoke. There are a ton of brine recipes on the net. Here's one that I used. http://putneyfarm.com/2012/09/27/home-cured-canadian-bacon/Came out great!

Slice it into medallions, hit it with a little kosher salt, coarse ground black pepper, and garlic powder, wrap it in bacon and grill it. You can also google Dr. Pepper Pork for something different.
