What's the obsession with the canvasback? I don't get it.

Taste better Now that is funny Congrats on the good morning LC! Thank ya... And I gotta say I think blackened Can is about as good as it gets. Pluck the breast and leave the skin on when you cut out the breast meat. Hot oil in a skillet (leave the lid on), cook skin side down first. Medium rare.

Canvasbacks are my favorite duck next to pintails. They taste great and theres just something special about a big bull can. They were hunted to near extinction in the market gunning days because ofthe price they fetched on the menues in fine restraunts. Sear a canvasback breast like a steak, med RARE with the skin on..
