In the mornings, breeze will come uphill, evenings it will go downhill is this true or the other way around? I have heard it both ways an I have a mule deer hunt in the canyons out near matador want to make sure the deer cant smell me

IME, that is true with the movement of the thermals. But if there is a breeze on a given day, the breeze will trump the milder thermals.

Get a bottle of bubble soap (3 for a $ at Dollar General toy department) and find out for yourself. It really is that simple.

Yep. Or some like to use a squeeze puffer bottle filled with talcum powder.
