I enjoy the whole bird. First fire up your outdoor turkey or fish fryer with about 3 gallons of water until boiling. While that is going, cut off the tail (fan), and the feet at the knee. Grab that gobbler by the neck and dunk his whole body in the boiling water for about 30 seconds. Pull him out and the feathers will slide right off. You may need channel locks to pull out the primaries from the wings. Rinse him off in cold water and he is ready for the smoker or oven. If I am lucky, I will try to serve one side by side with a domestic bird at Thanksgiving. Everyone likes the wild turkey!

I tried using the legs but they were just to skinny and to much tendons. If you take off the breast meat pretty much the entire bird comes off but the legs. Some people don't like wild turkey but I think its good and so did my family.

I breast mine out and the gf makes turkey and noodles in the crock pot and serves it over mashed potatoes, its the only wild game she will eat.

The only time I got the legs to taste good enough to eat I smoked them in foil with bacon grease, salt, and pepper. Usually wild turkey legs are just so tough. Guess they spend too much time walking around.

Am I the only guy that eats the neck? I think the neck has pretty good meat on it, it just takes a little work. I try to get as much meat as possible off the bird.

Fillet the breast and take the legs and thighs which usually find their way into pot pies.

Smoke the whole turkey after cleaning, use pliers to pull sinews out of the legs. Good eating!
