The trick to eating duck is to marinade for so long and put so much stuff on them they no longer taste like a duck. Which is exactly why I stopped shooting them.

Last year I made a great balsamic marinade. Let it marinade then sear it about 2 min on each side then slice it up like seared tuna. Cook down the balsamic and use it like a glaze or dipping sauce. Was very good and not overlooked.

That's just one of many ways.

I think ringers are the hardest to clean and the hardest to eat, so I don't shoot them.

I like duck marinated for a few hours, then lightly seared. Same way with dove. All the jalapino, cream cheese, and bacon takes away from the dove or duck taste too much so I've stopped doing all that.

One of the best "restaurant" meals I had was duck...I am sure these were farm raised because they had a much milder flavor than the ones I put down. I always try to get as much blood as I can out of the meat with milk/saltwater....then either briefly sear or chicken fry.... Where is Miss Kay when we need her?

I find it rather amusing that most people say "duck taste bad, and you know it's bad when you have to kill the flavor with bacon jalapeņo and cheese." But then they'll sit Down at a restaurant have filet minion and it's bacon wrapped with melted garlic butter, yet it is the best meat money can buy. Same with chicken, they'll inject it then put a rub on it and waste a perfectly good beer up its butt and call it the best idea ever.



Then you put one thing on a duck and "YOURE JUST TRYING TO HIDE THE GAMEY FLAVOR. "

Thems that say they don't like duck, I can assure have never had it cooked correctly. I think the best ducks are teal, Mexican squeakers and wood ducks. In that order.

Teal, wood ducks, and pintail are my favorite. But Ive eaten atleast 1 of every species I've harvested. Because of that,I no longer shoot bufflehead, goldeneye, scaup, ringnecks, mergansers. I'd rather come home with no birds than have to clean and eat those birds.

I cook duck A LOT of different ways. Deep fry with breading or beer batter, bbq with dry rub, or marinade (any of the pre-bottled stuff works great), duck parmesan (same as chicken parmesan, just substitute with duck), grind some into duck burger and make spaghetti, tacos, or sloppy joes, beer can duck, roast duck, and then a recipe I grew up with:

cut 4-6 duck breasts into 1" squares
Brown the breasts
place in covered cooking dish for 45 minutes at 350
add 1 can of cream of mushroom, 1 can of cream of chicken
bake another 45 min at 350.

Eat over rice or egg noodles.

that's my wife's favorite dish, and then the duck stays tender and is hard to overcook due to the creams.


Like everyone else has said, just don't overcook it. I like mine medium well (I have a phobia of undercooked meat), but its a fine line to overcooking duck. Overcooked duck becomes chewy- even if it still tastes good.

I agree with WAl, duck cooked properly is very good. I cook it a few ways that people can not believe it is duck and love it.
I never really soak or marinate it in anything either. I do not kill or eat divers though.
You spend some time in south Louisiana and you change your mind.

Teal and gadwalls are the best IMO, try them in duck empanadas, they are delicious!

Duck is fantastic. Cook it medium to medium rare, leave skin on for the render fat and it's great by itself. Never understood why so many people have a hard time cooking and enjoying duck. Glad that those who don't like it have quite hunting ducks, it's a waste to not enjoy it all the way to the table.

There are plenty of good sauces to use to accompany duck. My kids have enjoyed it and now want to hunt ducks with me since I never seem to bring home enough for a great meal.

I agree with Wayne...guys that say it taste bad are amateurs and don't know how to cook. I've made a lot of bad duck because I'm not always the best at cooking it...but I've made some awesome duck too. My last batch of teal is probably going to be cooked up this week. Both of my little girls who can both be picky eaters at times love it.

When I get divers I just cut the meat a little thinner. I used to let it all marinade longer but that got old. Just cutting the meat thinner allows it to marinade a lot faster and not as much time is needed.

I'd appreciate it if yall no longer shot divers or even puddlers...I'd be happy to have at em.
