Recipe for turkey legs or turkey breast?

I have both the turkey breasts and legs from my first wild turkey taken last Spring. Suggested recipes for the breasts? Legs and thighs?

Breast . Take the silver skin off, cut in chunks, pound like a chicken fry steak. then follow the post I made for quail, enjoy!

Turkey legs are tough. I boil them tender, bone it out, chop it up small and make a turkey vegetable soup with it. Dice up carrots, onions and celery, boil with the turkey stock and meat until halfway done(the vegs), then throw in some potato chunks. Salt, pepper maybe some garlic, serve with crackers or cornbread and it's a good meal. I hate to waste any wild game but this is about the only way for legs and thighs.

I took the legs from the turkey I shot last year and marinated them in all of my favorite seasonings for a day and a half. Then I put them in my electric smoker and smoked them for a couple hours. Didn't know what to expect but I was pleasantly surprised when they came out fairly tender and very delicious.

Ok, my first batch of wild turkey soup is almost done.
I roasted the turkey legs in the oven. The legs were pretty worthless with all the cartilage. So, I used the thigh meat only.
I used 4 cans of chicken broth, celery, onions, baby carrots, mushrooms, thigh meat, salt, pepper and garlic powder. I will add the potatoes tomorrow night when I'm ready to eat it.
I also prepped some jerky meat. It has to cure for 24 hrs.
I had backstrap for dinner with a side salad.
Good stuff and quite healthy too!

I like to chicken fry the breast and throw the legs away. I know it's wasteful but that's why I don't turkey hunt.

Take the breast and put jalopena in it and roll it up and wrap it with thick sliced bacon. Season it you favorite seasoning. I prefer garlic salt, lemon pepper, tony chacheres cajun seasoning, and more black pepper. Cook it just like you would chicken. Slice it up and it doesnt get any better. People go nuts. Also, try coating it with olive oil first.
