I was at the Wild Game Dinner in Graham last weekend, and while there had absolutely fantastic venison chili.
Does anyone have a good recipe for it? The chili I had was pretty mild, but very flavorful, and had no beans in it. I could've made a meal out of just that (but also enjoyed the venison sausage, dove, wild pork, etc. etc.).

I just use venison in all of the regular chili packs you buy at the store. You can mix ground meat in 50% if you want to tone it down a bit.

My wife makes the best chili i have ever had in beef of venison. I will let her explain.
This recipe can be used with ground beef only or deer/beef mix.... Dice a whole onion and sautee in a little butter Add meat(about 4 to lbs) and brown. Season with salt, pepper, oinion powder, and garlic powder( I don't know how much 'cause I just start shaking to cover top side). When meat is fully browned add Gebhart's Chilli powder to the mix until meat mix is thoroughly red. Let it simmer into the meat before adding any water or other liquids. Then add 2 cans of rotel (I use 1 can milder flavor and 1 original flavor), 3 8oz cans of tomato sauce, stir and add water barely covering the meat. Bring to a rumbling boil then reduce heat and let simmer for 15 to 25 minutes. Total cooking time is around 45 minutes from preperation to reay to serve. Be sure to use Gebhardt's brand Chilli powder. It is the only one I will use for chilli, and it has the absolute hands down best flavor.

I just made some last night for this weekend. I went to wal mart and bought 2 packs of the Williams Chipolte Chili Mix ($0.78 each) to make 4 lbs of chili. It turned out pretty good and it was real easy. I did substitute a little.
I added more chili powder about 3 tablespoons I also substituted the water for a 1 full beer Brown 1 lb of ground venison and 3 lbs of chili ground venison. I just followed the directions other than that but I did bring the pot to a boil then simmered for about 1.5 hours.
Has a good taste to it with a little heat afterwards, I like it and it is cheap.

That is a really great chili. I live in Graham and know a few people who run the dinner so I bet I can get the recipe. I'll pm it to you when I get it. I love chili w/o beans so I'm a little biased towards that type of chili.

Thanks, everyone--and Justin, if you can get that recipe, that would be terrific! My wife and I both agreed that that it was the best chili we've ever had.

I'm cooking up some venison chili this afternoon too. Trying the Wick Fowler's 2 Alarm with venison cubed into 1/2 inch cubes. Will see how it comes out. I used the hind quarter roast for the meat.

If you live near Ft. Worth you can go to Pendry's downtown and they have many different chili blends there. I have used 4 or 5 different ones and found that I like New Mexico Light the best. Great flavor and it is not real bold. We usually mix our half venison and half beef, with whatever else, onions, garlic, pepper, just what ever you like in your chili. Try www.pendrys.com
