Okay lets put it this way. Its (all quail) are just like a chicken Breast is white, wings, thighs are dark. I have eaten all parts but its difficult to get a fair amount of meat from the legs and wings.

How do you figure? Quail is white meat

I know some of these birds may hava little darker white meat but its still white. Dove and duck are nasty red dark meat, but atleast dove taste good.

Doves and ducks use muscles designed to develop endurance for long-term use and contains a large amount of myoglobin, allowing the muscle to use oxygen more efficiently for aerobic respiration. In contrast the white meat, generally found within the breasts of the birds (quail, turkey), are used for quick bursts of power which requires little of the meat-darkening myoglobin. This holds for ground-based bird like chickens and turkeys - birds which use their chest muscles for sustained flight (such as geese and ducks) have dark meat throughout their bodies.

I'm guessing the power to roll off of the couch during an NFL game to retrieve another beer produces whitish meat.

Desert quail are dark meat...It doesn't have anything to do with migratory or flying I don't think. This is what I think...duck hunters are retarded. That is why they shoot birds that taste like crap and their labs can be trained by a monkey. Upland guys are smart b/c they have smart dogs that take talent to train and shoot birds that taste good(WHITE MEAT)! WHITE IS RIGHT...RIGHT?!?!

Quail, chukar, and pheasant are the best eating. Partridge, grouse, and pr. chickens will make you gag! Liver on a stick! Woodcock aren't much better...
