Gonna smoke a whole beef tenderloin Sunday. What's your favorite side with beef?

Try Frito salad if you have home grown tomatoes. Just make up a regular iceberg garden salad, top it with dark red kidney beans, grated cheddar cheese, then toss it with Kraft Catalina dressing, add crushed Fritos and toss again.

Sorry I read wrong. Cream corn is great with BBQ but tender loin I'd have to go with asparagus and/or mushroom in some kind of reduction sauce.

Pinto beans, fresh made cornbread, country style mashed potatoes. Season the beans with a teaspoon of chili powder fro each pound of beans with a little salt pork. Fix the cornbread with a can of chopped Hatch green chilies.

Finish with a peach cobbler with a scoop of Blue Bell. up

Now I am hungry...

I'm thinking a little more on the lighter side. Except for the cobbler and Blue Bell!!

I like diced yellow squash, zucchini, onions, jalapeņos,cooked together. Then top with grated cheese when veggies are almost done.

Hominy ,with a drained can of rotel, and velveta cheese is good too.

Roasted fresh Brussel sprouts

Steamed or grilled asparagus

Grilled portabella mushrooms

Can't leave out jalapeņos stuffed with cream cheese, wrapped in bacon.

I typically slice 1 zucchini, 1 yellow squash, 1/4 red onion, a few white cap mushrooms, toss in olive oil, garlic powder, and a little fajita seasoning. Keep in metal bowl and throw on the hot side of your smoker about 30 min before dinner.

We have BBQ every year for a family reunion and do something similar.

All we do is mix Catalina dressing, whole kernel corn, and Fritos. Everybody loves it. Just don't add the Fritos until just minutes before serving to keep them crunchy.
