i have to do [like] 1000 poppers for a wedping reception. my question is, can i prep them and freeze them for 2 weeks. then slow thaw and BBQ them.

I can't see this being super successful to be honest. I think the Jalepeno will be mushy as well. The Jalepeno casing holds too much moisture, and when thawed they it will break down. Just like the deep fried poppers you can buy, those are never crisp.

You can make them a day ahead and refrigerate them, or core the peppers and refrigerate them. It won't take much time to stuff them.
