I have done that but in a WAAAY smaller version.

I only use them for fresh sausage, but HEB sells some Hog casings vacuum packed in salt in the meat area, they run about $4-5 a pack and will handle about 50 lb of meat.

When we are going to make dry sausage we always get casings from the local meat market.

Cabelas has them also. If you have time I like the ones from Waltons online the best.
