Depends on how you like it. Most of the time I slice it about 1/8 inch so it drys out quick. But have gone as thick as 3/8 for a thicker jerky. Did some in 1/2X1 inch stips a few times. It was good but that is too thick IMO.

As thick as you want it! The thickest I'd go is about 1/8th" ~

A lot has to do with how dry you want it and the most important is how good are your teeth.

1/4 inch is good however have u tried getting ur venison ground and using a jerky gun? Turns out great and easier on the teeth.

The jerky gun is good option but is a little more work. I like 1/4 thickness the best.

I like the thinner slices (1/8" - 1/4"). I got some jerky strips cut at the processor once (and only once) and they were about 1/2". I used a meat pounder to flatten them.

I cut most of mine 1/4" - 1/2" thick and cook on an electric smoker , sometimes I cut it 1" or thicker and it all turns out great . Usually set cooker on 180* - 200* and use whatever type of hardwood chips I prefer .

1/4" max, otherwise it seems to take forever to dry properly.
