fail safe..smoke some peppers(jalapeno(12-15), a (single)habanero and some serrano's (8-12)... garden fresh) for about 10-15 minutes at bout 200deg. dry them out..any way, but crispy dry. throw em in the blender...turn to dust. use as a rub about an hour or 2 while the meat gets to room temp. smoke it(speaking of back strap this whole time)for about 10 -15 minutes per side, furthest from the heat source. glaze and then serve when internal temp is 145.
chops..just like fried pork chops. thinner the better, hotter the oil, cook em fast. let em rest 5 minutes on a few paper towels ...or smothered, just like pork chops.

If something has to eat it, feed it to your dog. It may or may not eat it. Depends on your dog. Otherwise, to the trash it goes.
Honestly, if you killed a younger one, its prob edible. An older one is going to be extremely tough. Tenderize, let sit, and tenderize again and again. May turn out alright or may not. Good luck. I tried it once, and that was once too many.

Did not have any problems to eat.Nice flavor if you dont mind slight gamey taste. Afterall, it is not a farm cow. Meat is a bit tough, not very suitable for grilling as it will get too dry too fast. Tenderize, marinade, grill fast thin slices. Stew turned out very good, scraps and odd ends went into hamburger, also very good. Some scraps on bones turned into soup, very tasty. Will get another aoudad later.
