I love them, they have a better diet up north than other divers in most cases from my understanding.

Soak the scaup in salt for 24 hours before you cook it and it will taste just like any other duck.

Thanks guys. The plan is in. got 2 Mallard breast sentenced to the grill tonight. Tommorow night a Gadwall and the Scaup are sentenced to a nice pot of gumbo. With red wine and french bread....of course. Justin Wilson style which means drinking half a bottle while the gumbo is being made and the other half for digestive purposes.

Blackened cans are very good, man. A little Slap Yo Mamma Cajun seasoning and some blackening seasoning in a little oil. Pick the feathers off the breast and breast it out with the skin on. The fat renders down... make you wanna slap yo mamma. Tastes just like steak if you don't overcook it.

Salt and water. Straight salt without water would mess up the meat.

Scaup have darker red breast meat than most dabblers. Soaking the cut up breast meat in salt/water for a day turns that dark red breast into a nice brown color just like the rest of the ducks.

I brought home a Greater Scaup on Sunday. One of the biggest scaup I have ever seen and its breast was huge. He is now soaking and will be grilled up tomorrow and will taste exactly like the Widgeon, the Pintail and the teal soaking with him.

Never had scaup, but i am yet to eat a diver that i thought was bad. Just don't overcook and you are set. Gimme ringers all day long and i'm a happy man!

Recipe for Scaup one 8inx6in cypress board lay duck on it and apply Tonys seasoning garlic butter,Garlic and any of your favorite seasonings cook about 30 minutes in oven and take the duck off the board throw it away and eat the board. Thats how good it is.
