Men let me tell ya, I downed a 100lb hog last week and wanted to do something different. A mexican friend suggested Tamales and it was the Right Choice! Cooked a deboned hind qtr all night season up in the crockpot, after work it was shredded and slapped on mesa with a piece of jalo and cheese wrapped and steamed for 2 hours. Dam best tamale I ever tasted. Try it guys its worth your time.

What seasoning did you use in crockpot?

Just Natures Seasons (morton brand) found at Walmart, black pepper, and lawerys season salt on meat. Mesas added crushed red pepper flakes and ,chili powder, salt.

When you say mesa, are you talking masa? Or is that some kinda seasoning?
