Ok, so last night, my wife takes the kids out on the town, I got the house to myself, decide to fix my first ever diver dinner. 1) Bufflehead 2) Ringneck 3) and Bluebill I had the duck breasts frozen together, I could tell which one was the Bufflehead because it was smaller and that was surprisingly good. Ringneck and bluebill I could not tell apart, but I know one tasted ok and the other taste like crap, not as bad as spoonie, but pretty bad. Can anybody tell me which one it was? I want to make sure I don’t that no more.

Can't tell you which is which, but I do know, I don't plan on shooting any divers in the future

Bufflehead was actually good, only one was bad, I bet it was bluebill, man I been burping bluebill all day.

Yeah I'm guessing it could have been either one of them...maybe the one you didnt like got cooked a little faster and was overcooked?? Or maybe it was eating in certain areas before you killed it. Ducks down on the coast taste bad compared to ducks up here...maybe it's the saltwater areas and change of diet?

Marinate the breasts in Heinz-57 sauce, sprinkle on garlic salt. Wrap in bacon. Place on hot grill for 5 minutes each side. Remove from grill, peel off bacon. Throw bluebill away, eat bacon.  (Just Kiddin!)

Lawry's mesquite marinade over night, cut in strips, wrap with jalepeno and bacon, then grill.

cube duck breast, tan in pan with about 1/2 lb sausage then add the Zat. red bean and rice.
lay some sliced jalepenos on it and put some crackers on the side.
I don't shoot divers but this cooking method produces a hot bowl of goodness that my 8 yro son loves. his is minus the 'penos. for 1 box of Zat. I use 6 teal or 3 big duck breast and jimmy dean sausage. works well with goose too.

When it comes to marinade, I pretty much just go with olive oil and spice of the day, all store bought marinades seem to be so salty, etc..

Guy - I would bet it was the scaup/bluebill since their flesh is much darker and denser than ringnecks or other divers. I won't shoot them mainly for this reason only, but will hammer the ringnecks when they come to my ponds.
Now, I haven't eaten a scaup that was better than a spoony and would them WAY before I would scaups or mergansers, especially the ones taken from freshwater wetlands.

For one, I do not shoot divers unless I need training ducks. I will not shot anything I will not eat and I am not going to eat no nasty [censored] divers!

Not true....My inlaws are ASIAN (the PC term) and I gave them some ringers this past season. Pops came by the house and begged me not to give him anymore of the "black and white" ducks because they tasted horrible and stunk up the house... Stunk up the house ? An Asian house ?? I laughed and laughed..Really hard, but he was dead serious.

Best way to cook divers is to simmer them in crawfish boil for about two hours. Red heads are awesome this way.
