They really depend on what they have been eating. They can store a lot more fat so it tends to give a different taste. I recommend bleeding it out pretty good before processing. Also depends on when you take them. If you get one early before the rut in September trough November you will probably have a chance at some better meat. I have had some really lean fallow from a habitat that was not feeding them too well and it didn't taste so good. Fallow will graze and browse and eat almost anything. From my experience with rasing them back when there was a meat market for them, you get better meat from ones that are in an area that allow good grazing pasture for them and are on good protein. When they are lean like after the rut, its not that bad like around January or February.

Probably my favorite deer to eat. I prefer it over axis, but that is just my opinion.

I shot one a few years back and we loved it. It tasted like a cross between venison and beef.

Man I have been trying to figure out how to describe the taste of the fallow for a long time and could never quite figure it out. THIS IS EXACTLY IT!!!!!!!

Soak the steaks in 7up over night and then rub down with steak rub for grill. I have cooked them in a crock pot like roast and they were excellent. Ground meat is great with 10% bacon in it and the backstraps were amazing marinated in a little itallian dressing.

I have tried the Italian dressing before. That wasn't too bad on backstraps. The 7up I have not tried but I have used Coke-a-Cola.

I use coke in the crock pot for roast but have never marinated in it. The 7up give the meat a sweet taste. I freeze my fish fillets in it also instead of using just water. It seems to keep it a little fresher. If you use it to freeze fish let it go flat first.

My steaks were bacon wrapped and seasoned filets from Syracuse. OMG were they good. Unfortunately I lost most of the meat during Hurricane Ike.

Between my son and I we have had 3 fallow, 2 bucks and 1 doe and they were awesome.. Now the flavor I felt was not near as a wild flavor as deer and to me deer is great.... Another thing is how fast and well it is processed and allowed to age... The first two we shot we quartered right on the spot and put in a big ice chest in a bed of ice and covered with ice and allowed to bleed out the meat.... then we took it to the my local meat market.. I believe the meat sat on ice for about a day, but we kept putting fresh ice in the box and drained left the drain open.... That meat was excellent... we made everything from spaghetti meat with it to hamburgers and chicken fried steak.. I like it over the axis and whitetail we had at the time. Enjoy!
