This is a good way to get the "duck" taste out of duck....
Ingredients:
2 lbs duck 1 can chicken breast 1 package Wick Fowlers 2 Alarm Chicken Chili mix ¼ large onion 1 can Rotel Mild 1 can black beans
Follow directions on 2 Alarm chili package with the following exceptions:
Cube the duck into 1” pieces and soak in salt water for 24 hours.
Saute about ¼ of an onion in oil and add cubed duck. Once cooked to medium rare or thereabouts, strain grease and put duck and onion with other ingredients in stew pot.
I only used ½ of the cayenne pepper package and it was plenty hot.
Bring to a boil, cover and simmer 10 minutes, stirring to keep from sticking. Uncover then boil another 15 minutes or so.
This will taste best if you make it a day before you plan to eat to allow the juices to soak into the meat.
We served over small fritos, with sour cream and shredded cheese stirred in.

So it was really good? I have tried duck chili was not good, but I may try your way... I still got a lot in the freezer from last season...

Yep its good and gets rid of a lot of duck. I think the longer it sets the better it tastes as it soaks in the flavors. Also when I dump in the canned chicken I pour in the chicken juice as well... anything to hide the duck flavor.
On another note, when we cook duck any way besides this recipe, we marinate it at least one day in jalapeno wine. I even started making my own jalapeno wine in order to always have some on hand.
