May be dreaming but considering if it's really worth training the pup professionally since I have seen about 8 quail total on the farm. Are folks seeking well trained dogs to assist in hunts or does everyone that has a healthy stock of quail have quality dogs?

I believe you have a young GSP. You can use a versatile dog for more than just quail. I use a Vizsla for everything I hunt that flies. He only hunts upland maybe 25-30 percent of the time. The rest of the time its waterfowl and dove. Then run in some NSTRA trials. That means I get to hunt with the same dog from September through end of February.
