I just harvested some snow geese from Nebraska and would really help some ideas on how to cook them

Boil them up with lots of celery, carrots, and bell pepper. Then throw it out and go out to dinner.

Making snow goose takes a good deal of preparation to make it taste good.
Morning Day 1. Take the breast meat off the bone and put it in a gallon ziploc bag, should hold about ten breast pieces. Fill it up with water, put in fridge, and let it soak out all the blood. Every time the water gets red, dump it out and fill up the bag again. do this for 24 hours (Rinse it about 4 or five times).
Morning Day 2. Drain the last of the water out of the bag and refill it about half way with Moore's Steak Marinade (liquid) and put back in the fridge for 24 hours.
Evening Day 2. Lay all the pieces out on a cookie sheet and sprinkle them with Fiesta Brand Fajita Seasoning on both sides. Let sit about an hour or so in fridge then put it on a hot grill and cook just like a steak. Tastes great and has no wild taste to it if you take your time and prep a couple days. Next time I do this I will take some pictures.

This works pretty good for all waterfowl and I used to HATE it. Every time I went duck or goose hunting I gave away all my meat because I hadn't found a way to prepare it that tasted good. Figured why not try to cook it like tough skirt steak and man it turned out good.

I like it grilled. just marinade for a few hours. i always soak it in water before marinading, changing the water a few times. Just dont over cook it. It's also good ground up. i like it in spaghetti or tacos.

My grandfather always told me to gut, pluck, wash and hang the whole birds in a cold (below 40 degrees) dry area for several days before cooking or freezing. I think the point was to age the meat and that was what I have always done. I know a lot of people soak it in water to release the blood but for me that takes away the flavoring. I have several ways to cook it but my favorite way is to slow cook over wood coals to preferred temperature. For those who do not like waterfowl feel free to send it to me I would greatly appreciate it!
