Hey guys, I'm breaking in the smoker Saturday by roasting a whole pig (40-50 lbs) for the family. Can anyone recommend some good recipes?

Lots of wood to start. Salt an pepper. Baste with butter, vinegar and lemon. Cook for 8 hours and enjoy.

How long does it take to bleed out a hog taken from the woods? We have a hog hunt coming up and we'll be roasting one whole. Thanks for any advice you guys can give.

best to age em for 10 -12 days at 37 degrees..very tasty..
