With the new laws being passed, I'm hoping to kill one or both of these animals. I have heard oryx is good venison. What about the addax? Best way to cook either one?

They are both antelope so you should be able to have it processed just like you would a deer. Steaks, Backstrap, burger/chili meat, etc. I am going to have most of my Oryx(if I connect next week) turned into jerky except for the backstaps.

I wouldn't have roasts, straps butterflied, ad ground just like a deer it would be a waste to use oryx for jerky as the meat is much better than wt or axis in my opinion

Both are very good eating. Not to many ways you can't cook them.

I slow smoked a whole oryx ham for about 18 hours this weekend for my birthday, meat fell off the bone straight into my mouth

I chicken fry my oryx but have made some jerky out of some meat. When you make it into jerky the seasoning will hide any distinct flavor the meat might have.Grinding and adding some beef would make it go farther for small cuts of meat!

oryx is. i freeze the hams whole and cut them up on a ban saw 1/2 thick.butter fly the backstrap and grind the rest

Be careful about eating Oryx, cause once you try it you will not want wt again.
