Gotta freezer full of duck... Only success I have had with cookin em has been moose's gumbo and stuffin a jalepeno with cream cheese and wrappin that and the duck in bacon and grillin em, need some good recipes from you guys...also what tricks do yall have for gettin the gamey flavor out?

Cut each breast into 3 strips and chicken fry 'em, with mash potatoes and gravy.  Or, make duck tacos/fajitas.

Try brining them.... put in ice water and mix with salt..... and let soak for a couple of hours and drain water do it again till blood runs out... then soak in italian dressing.... but other then that we inject them with creole butter or any of ur favorite injections then flouw and chicken fry

Gonna try frying them...i tried goose fajitas tonight and it was a major fail...super gamey and really tough

I did the kabobs thing last night....best I've ever had by far! Before I freeze any duck/dove, I soak them in saltwater at least 24hrs. When I thawed these, I cut them into little chunks and again soaked them for 2 hours. Then just put bell pepper(yellow, red, green), onion, bacon, and jalapeno and on the grill. I didn't put one grain of seasoning or anything on the meat other than the salt when I cleaned and thawed them. I definitly surprised myself and will most likely cook them that way 90% of the time!

Kabobs are the best way to go I have found. I like the gumbo too but as far as simple and good kabobs are very good

I smothered some last night just trying something new and they turned out pretty good. Browned on both sides, salt, pepper, and garlic powder. Put two packages of brown gravy mix in the skilet, half of an onion/sliced, put the lid on it and let it simmer until the meat was done and the onions where soft. The ol'Lady even liked it. I figured that was the true test! LOL! O i ran them through the tenderizer first so they looked almost like a cutlet.

Baste overnight in Redwine Vinegar mixed with Zesty Italian dressing. Get one piece of 2x6 same lenght as Duck.Tie to 2x6 using butcher twine,wrap in foil and cook at  350 for 1.5 hrs. rebaste every 30 min..unwrap, cut twine, throw twine and duck in trash ,Eat the 2x6.

Here is my favorite:
Black Bean BBQ Duck Enchiladas
1. I marinate the meat overnight in equal parts of pineapple & soy sauce; I also add a healthy dose of ginger (powder or dried). 2. Smoke the duck breasts (say 4 large breasts) on low, indirect heat for 20-30 minutes...should still be rare to medium rare when cut. 3. After smoking, I cut the meat into thin strips 4. Heat up 1 tablespoon of bacon grease in a skillet 5. Add meat to skillet once it is hot & saute for 1 minute 6. Add 1/4 cup shallots and saute for another minute 7. Add 1 can of black beans and bbq sauce* 8. Low heat simmer until heated evenly 9. Fill the enchiladas and cover with some more heated bbq sauce & habanero jack cheese
*I make my own bbq but you can use whatever. My suggestion would be to look for a "thinner" sauce with a bit of kick. Add to the skillet until you get the consistency you want for enchilada.*

Filet te breast off the bone. Marinate in Tony's and your favorite BBQ sauce over night and season to your liking. The next day throw the duck in the skillet and cool some rice at the same time. After they're both done put te rice on te plate then add duck and some juice from the pan on to te rice. Yum yum yum!

Grind meat marinate with what you like brown meat with onions,wrap it filo dough and deep fry. Makes almost like a duck egg role.

I always brine the fillets after I clean the ducks.
Try this chicken fried duck:
Put breast fillets in a thin plastic bag Pound them out with a meat tenderizer Sprinkle with salt, pepper and a bit of Tony's Lightly coat in flour Dip into a mixture of milk and 1 egg Dip in Panko bread crumbs Fry in a skillet until golden brown

Cut each breast into 3 or 4 pieces.
Saute some green peppers, onion, yellow squash, olive oil and garlic.
When the veggies are almost done, throw in the duck until it's brown.
Mix the above with an equal or lesser amount of red beans and rice....enjoy.
