J & J meat processing is a joke. I had a 150lb hog done and got back 40lb maybe. When I got my deer back same issue. They are a ripe off. The only good thing I got from them was my euro. I helped a processer last year a I know I was shorted. If you don't mind not getting all your game back then use them.

I picked up a buck from there last weekend and am very pleased. I received a good quantity of meat - barely all fit in my 50qt cooler the exact same amount I had received from an equal sized buck the week before from Clear Fork in Graham. The packaging was excellent, the meat looks great. I had it cut into steaks, ground, hot links, smoke sausage, and jerky sticks. So far I've only eaten the jerky sticks but they are almost all gone - very good. In fact if it doesn't break the bank I may just shoot a doe and have nothing but jerky sticks made from it!

Where in the body did you shoot your Deer. That could have been the problem. I know a lot of processors that if a Deer is hit in the shoulder or hind quarter, will pitch the entire area.

I had a post just like this last year..I hunt Jack county and I can promise you none if my game will go there..I will go out of the way to take it to Clear Fork in Graham.

How did you have you deer processed. What I mean is backstraps into steaks? How much sausage? What kind of sausage? How much was to be ground? These questions have a LOT to do with how many pounds of meat you get back.

I hit the deer in the heart. Had backstrap steaks, 2 roasts, and the rest burger. The pig was backstrap chops, 2 hams, and the rest ground, the pig was trapped. I had a lot more meat off my buck last year and he was smaller.
I said something to the lady (20 something I think) up front. She asked if I was b#$%@ing about it. Then she said she would get her daddy. I left before he came out, didn't want to deal with attitude.

My experience is you get about 30%-35% of live weight back from a wild hog. That would put your 40 pounds of meat right in line with what I have seen from all but one of the hogs I have had processed over the years and there have been quite a few of them too.
I dont see a problem here.

I've processed our deer for the last 20+ years and from an average east Texas deer we get around 25 cutlet steaks from a deer and 20-30 pounds of ground meat. Noting we do not mix fat with our ground meat for hamburger. From what you said you got your steaks. Two roast if they average 4 punds each then you should get around 12-22 pounds of ground meat. This is of course depending on the exact size of the deer. If you received 40 pounds total I beleave you got all your meat, JMO.

Personally I think the sausage at Clear Fork is too dry. I've been using them the last 5 years, took my son's buck he shot before Thanksgiving there and wasn't too crazy about the fact that they close at 7pm now and leave the cooler open for 24 hour drop off. We did, but someone could come and take your deer, switch numbers, etc..
J&J is open till 9pm and they offer some processing options that Clear Fork doesn't - German Links, Hot Links, and Jerky Sticks. I've not eaten any of the sausage yet but I will this weekend. If its alot better than what I get at Clear Fork then I probably won't be going back there as I received just as much meat at approximately same price ($170 at J&J, $180-185 at Clear Fork) - though since Clear Fork included a caping fee I guess that did make J&J cheaper.
Both are vacuum packed so should store well though with Cleaf Fork you pay extra for vacuum packing whereas you don't with J&J.
Clear Fork you pretty much pay for everything but the sausage processing fee upfront. J&J I didn't pay a penny till I picked up the meat. That can make it easier on the pocketbook.
You do get great service at Clear Fork if you are droping off during normal hours (pictures, truck washed out, etc.) that you won't get at J&J.
If I had gone inside at J&J when I dropped my buck off I would have had whoever does their euro's do mine. I didn't know they did them and just had the horns cut off to do a horn mount. Allways next time. When I picked up my meat last weekend the walls had quite a few euro mounts in there so whoever is doing them must turn them out pretty quick.
J&J did mess up part of my order though. I had asked for smoked Jalapeno sausage WITHOUT chease and got it the regular way with chease.

This is why a lot of people do their own now. I have a processor I like and trust, when I want to go that route but you can pick up a meat grinder for about the price of two trips to a processor, muscle out roast and cut steaks from backstraps easily enough.
Granted you have to have time to do it. I teach school so I get a week at Thanskgiving and two for Christmas so I have that luxury.

Every processor I have used charges a $50 deposit (even 15 years ago, this was the case). In today's day an age, they almost have to charge you. If you don't pick up your meat, they lose money on the deal. I talked to my processor the other day and he said they have several people each year who drop deer off and just never come back to get the meat.

The deposit thing kinda sucks but I was told that Fishers had nearly 80 deer not picked up last year so I understand . So , this is the first year in about 20 that I have been doing most of my own processing . I don't mind doing it as long as its not 95 degrees outside .

Syracuse meats has done several deer and pigs for me and even though I process most of the meat my family consumes when I donate one it goes to them. I have been very pleased with the product and service there.

We did a 154lber last week, and ended up with right at 43lbs. Weight your game, then figure in bones, head, etc....they add up quick
