I have a couple of ducks from last year, wondering how you guys cook them? Any help would be appreciated.

If they are from last year I would make jerky with them. Slice them real thin and marinate in worchester, liquid smoke, brkskit marinade, soy sauce, and tobasco..anything like that ou want o throw in also. Throw in some brown sugar, a little salt, and spices especially garlic and onion powder, lots of coarse ground pepper, and a pinch of celery salt. Slice the meat thin and dry in a dehydrator in the oven or even better on the smoker.

Breast the duck, stuff with jack cheese, mushrooms, and jalepenos, wrap in bacon, grill,
Then, unwrap the bacon and all the fixin's, eat that, then feed the duck to the retriever that picked them up...
All kidding aside: I love hunting ducks, but I've never had GOOD wild duck. I've had some that was alright, some okay, and some not so good at all.
If you cook them, DO NOT cook them to well done. Medium Rare, Max.

Take the breast and slice long ways in 3/8" strips. Soak in a cup of butter milk mixed with a little black pepper and 1 shot of hot sauce for 1 to 2 hours. Take out of milk and dredge in flour. Chicken fry in hot grease till med done. Remove and make pan gravy and serve with bisquits. Best steak fingers you will ever eat!

Prepare as MudShark stated, cook on the grill on a damp cedar plank.......... When it reaches an internal temp of 175....... take the duck off of the plank, and eat the plank!!!
