I cook mine till the bacon gets crisp, but don't over due it too much or it will dry out on you. I prefer indirrect heat. Let it rest, slice & enjoy. Cooking time & heat varies, I just watch the bacon. PS: I like to stuff & wrap mine, then marinate in the fridge over night before cooking. It helps. Oh, & try this too, (I love it), when it's almost done glaze it. I like to use strawberry preserves melted a little in the microwave, then spoon or brush on for the last few minutes. I cooked this venison tenderloin the other day. I'm stuck in a hotel room right now so no access to bbq pit/grill. I cooked this one on an open rack in my lil' convection oven I brought along, & stuffed it with red ripe jalepenos/sweet bell peppers from my garden/onions & cream cheese. I forgot the glaze but it was awesome.

Grill the outside for about 5 minutes on all sides and throw it in a 400 degree oven for 15 minutes. I dunno how thick it is, which will change the finishing time.

Man that looks good, you take that to a hotel with you? Yessr, brought it from home. All I have at the hotel is a two burner stove top, so I brought my little oven from home. It's not my BBQ pit, but it gets the job done lol!

If its wild pig I usually will cook it all the way through. I'll go medium with domestic.
I would brine it and cook it til just done. If you don't know what it should be by feel, get a meat thermometer. Brining will make it juicier than bacon ever could. Plus, the bacon is usually a soggy mess.

1 tablespoon of salt per every cup of water. For the loin, don't brine it too long or will be salty. 4 to 6 hours maybe. You can infuse various flavors into the meat by using crushed garlic, rosemary, tyme, etc etc....to your liking. You can google up a brine recipe, or you can buy a brine mix & just mix with water. Good juck!

You people keep confusing pork loins, and deer backstrap with tenderloins. There is a difference.
