Ooooh, sounds good especially the young ones which should be tender or parboil the older ones and then marinate and bacon-wrap them dudes. Dang, I need to hurry up and get my deer so I can concentrate on shooting squirrels at my place!

good idea to parboil them. Are you planning to cut them up first or do them whole? Personally I think it would be easier to fully cook without overcooking, if you cut it this way: the back legs off, the saddle, and cut the ribs off each side of the backbone (leaving the front legs on the ribs). This is the way we cut up cottontails. I would think that the back legs and saddles would cook better on the grill, being thicker cuts of meat. I would save the front quarters for either frying or soup.

'Parboil" is a fancy way of saying, "cover with cold water to a depth of 1 inch or so, bring to a boil, count 10 minutes, and drain, not using the water for anything else".

It is useful to parboil any meat that you don't know the age of, prior to frying. Also, parboiling ribs prior to placing them on the grill or the rotisserie can make them more tender.

Flavoring the water you parboil is optional.

OTAY?

I think they are best in a gravy or gumbo. Just me.

The young grey squirrels are great fried but cut them up. An easy way to do this is make a cut across the backbone right behind the ribs(leaving the chest cavity and arms) then cut infront of the legs. It's about a one person serving and the tendorloin meat is pretty good.

When and if you parboil, put some seasoning in it. I recommend Tony's Chacheries.
