My dad is not much of a hunter, but loves hiking. I love to hunt.
We both want to go to Alaska, he is happy to watch me hunt, but wants to do exploring.
Dad is in very good shape and has done a lot of hiking/camping in the mountains of the continental US.

I want to plan an awesome trip, Dad would be cool with a hunting trip as long as it included a strenuous hike/camp.

Where do I start a search. Any suggestions.

Here's a really good spot to start. It's the Alaska Outdoors Forum. There is a lot of good information here on everything, camping, hiking, boating, fishing, hunting and more. http://forums.outdoorsdirectory.com
I went there in mid September on a bear hunt and that is a very beautiful state. It's worth going just to see the place.

I second the Alaska Outdoors Forum as a good to place to start.

Denali National park is a great place.

The first thing you need to decide is what you want to hunt and when. The hiking is a given and not really something you need to plan for unless your not in good shape. As soon as you leave the road up there on foot it will get strenuos!
