So do any of you save that for dining if it's not damaged too badly?

Heart is great. Cut in strips, salt and pepper, wrap in foil and cook under hot coals for 30 minutes or so.

I ate the heart of a muley doe I shot last year with a bow (because a friend kinda made me). I was shocked. Some of the best venison I've ever had. But usually, no, it stays in the gut pile. I'm a sucker for liver n onions, but I've never had the balls to save one from a deer.

I used to until I found out how much cholestoral organ meat has. Yes sir. The liver anyhow. The heart isn't bad boiled, sliced and made into sandwiches.

I loved fried deer heart. Just slice into thin slices, flour and fry. Probably my favorite part of a deer.

I never realized how many eat the heart.. I've never considered it. My dad always kept a zip lock bag with him for the liver. I've eaten venison liver and onions many times..

Oma always made us bring her the heart. I forgot one time and she made me go back and get it. Probably the best dish she's ever made.

If you've never eaten deer liver pate you don't know what your missing. I love the deer heart and deer liver sliced thin and fried too.
This year I'm going to give pickled heart a try.
When I hunted in England, this was called the hunter's pluck. This is the meat you got to eat the same day you shot it. The rest of the deer is hung to dry age to perfection.

Never tried the liver. Plan to this year. The heart is great through. I have had it many ways and it is always good.
If I'm not hunting something I must be dead.
