Jurek's Smokehouse (979) 843-5211 Markham, TX
You will get your own deer back, he doesn't "batch" process.
Added: Don't bring him a full ribcage or whole carcass, he'll charge you an extra $50 for all that de-boning. (personally, we never mess with the ribs anyway, there just isn't enough meat on them.)

The early bird might get the worm, but the second mouse gets the cheese.

does anyone have any other processers in the houston Area? Google meat processors of Houston. Processing costs are another huge bite out a of Hunter's wallet.

and do these places have the wide variety of choices like midway? I just get smoked links from Cernoch's but I've had their other stuff and it's good, don't remember what I paid last year but it's reasonable.

Daniel, I usually alternate between B&W Meat Market on N Shepherd and Pete's Fine Meats on Richmond.
I think B&W is cheaper, depending on what you have made. B&W will do all of the "cuts" of meat, plus they do smoked sausage. I had deer processed at Pete's, Midway, and B&W last year, and I prefer B&W's sausage. Have them do the garlic for something special. Not strong garlic, just a fuller flavor.
Pete's makes some of the best tamales around, with the most flavorful masa I've had on a tamale. Just be sure to specify how many you want. I didn't specify my first time and got 90 dozen back (with the bill to match). I had tamales and jerky made at both Pete's and Midway, and preferred both from Pete's. Pete's also makes a top notch polish sausage. A bonus that the owner is a REALLY nice guy. Gave my kid a bag of Frito's on the house.

I stopped going to Midway when I found out they grind all the sausage and ground meat orders together from several deer, not just the yours you brought in.
Wish I knew of a place in Houston area - can vouch for Cernoch's quality, flavor and taste!

Hello, this is Midway posting. One of our customers made me aware of the comments posted. First, I have worked here for almost 20 years and can assure anyone that we do NOT mix your meat with anyones! That rumor always gets started about us. I would be more than happy and have before give any customer a tour of our facility to show you each step that is taken with your meat. The meat you bring in is what you get back! We do charge $60 for processing. That includes all your steaks, hamburger, chili, roasts- basically any cuts you want. Sausage is additional per lb. If you bring your meat in boneless you do not have to pay the $60 charge- only the price per lb for sausage. Please call me with any questions or concerns. We want your business and we want satisfied customers. Thank you!!!!!

i am from a small town in Louisiana, and I hunt usually in the panhandle with two guides here. Last year 11 deer, 2 smoked jalapeno and cheese summer saugage, was $229.00 that was two whole deer over 200 pounds each. Other 7 were processed into hamburger, steaks, and hamburger for only 244.00 So I take my deer thee on the way home, and go back and get them, plus been using them since I was 13, now 51. I would love to find one that does them here for around 40-45 each
avid deer hunter that is disable but God has still blessed me.

We have been using Fisher Ham & Meat Company, Spring, TX. Never had a problem with them.

Cernoch does a good job but is a little pricey. I have settled on the Bellville Meatmarket. Best quality and price combo, well worth the short drive out I10

Years ago I couldn't make it to Midway. I called Herman and he mailed me the spices so I could make the sausage myself.

Daniel, Jurek's makes all kind of stuff. Jerkies, sausages, breakfast links, and will process your meat any way you ask him to. I think we pay about $120 when we don't get sausage made, when we just get hamburger and steaks/cutlets. The orders where we get sausage made run about $230. on average what do you pay to get your deer processed at these places?
and do these places have the wide variety of choices like midway?

Another vote for Fishers in Spring. Good sausage, returns your deer, and is a good guy to speak with. Been in the same building since 1954.
