I heard some of those Japanese sushi knives can run up to $5,000 or more, each. Very nice knives.

I would eat all of it except the Uni, that stuff taste like burn rubber to me. The rest of it is goooood!!!!!

Do you have a restaurant, or are you a personal chef, or do you cater? My wife would love some of your sushi; if that's not possible, can you recommend a sushi place in N. Dallas that meets your standards?

So you're saying I shouldn't try to cut sushi with my Buck knife my dad gave me when I was 7, that's gutted hundred's of animals? I can't just use a rock to hit the back of the knife blade, on the fish cuts?

For the uninformed,(me), what constitutes sushi, and just what is sashimi? The only sushi I've eaten, they make at our area H.E.B. stores. The wife and I both love it!

Sashimi is thinly sliced fish. Sushi is fish on rice. There there are sushi rolls.
That walleye looks great. Chef, is that basil or mint?

That walleye looks great. Chef, is that basil or mint? Sashimi is sitting on top of shredded daikon radish and sisho leaves (perilla). The sauce on top is a special ponzu I make with Yuzu juice, soysauce, rice vinegar, lemongrass, thai basil and green onions.
