Here's how I rolled with my last batch of duck, I stuffed myself, it was dang good...

I’m gonna use corn tortillas next time, I bet they are better…Healthier, hold less oil..

I’m gonna also change up the way I do those nachos next time to better knock out the game taste. Below is what I did Last Time, then below that is how I’m gonna change it Next Time.

Last Time:
After duck was chopped up (see pic below) , I soaked in water to bleed blood out.





As can been seen in 3rd pic above the duck was so finely chopped, if I strained the duck meat I would lose too much meat, so I poured off the clear water, and added the rest with the duck meat to the saute onions and garlic, then spiced and cooked down..

Next Time:
Before I chop, I will cut in small cubes , and bleed like that in water…Clean/bleed real good, strain, pat dry with paper towel to get rid of more water, then chop, add spice up good, let sit for a while, maybe refrigerate, then throw in separate hot pan with little olive oil and fry the meat up real good, then throw into the pan with the saute onions and garlic... up

I think this will be much better. I tell you I make that same kinda nachos for my kids but with wolf brand chili, and when I asked my kids how they liked it they said “we like your other nachos better." grin

So I’m still experimenting with this.

ya i no what you mean. Our flour tortillas held a little to much grease but boy did they taste good. food How long do you usually let the meat soak in water. I do it for about three days alternating the water and it seems to be good enough.

One thing I have found is I soak my meat in jalepeno juice and it pulls the gamey flavor out. May have to try the small cubed meat tacos.

Here some other duck nachos I did, old thread.. some more good duck nacho ideas, my next bacth will be on the money..

Ranch style beans are a good nacho ingredient.
