What in your opinion is the best tasting wild game. I have heard antelope isn't that good but I haven't tried it. Venison can be good or gamey depending on how and who prepares it. I like buffalo, venison, quail, but the best wild game I ever had was an elk steak at a friends house.

I'll second elk. I also love dove when they are cooked the right way. Stay away for Aoudad - unlees you need dog food.

My vote is for quail, fried with biscuits and sausage gravy. You are right Aoudad is just plain nasty. It just kills me to think that such a beautiful trophy animal can taste so bad. I have had the chance to arrow one but I let it go. Guess if I ever get the chance to harvest one again my dogs will eat good.LOL

I shot an aoudad a few years back and thought it was very good. I had it made into breakfast sausage, hot links and german sausage.
My favorite game animal to ear is dove prepared as followed. take the brest meat off the bone and marinate them in zesty italion dressing, shot of whiskey, little hot sauce and some usual spices. let them sit for about 4-6 hours. take a jalapeno and some cream cheese and put it in the dove breast and fold it over. Then wrap in a piece of bacon and put a tooth pic in it. grill it till meat is done.

I like it all, cooked the right way......However, I have had Antelope or Pronghorn and it was good, but Blackbuck is better.
Axis is also good.
Sure is hard to beat Buffalo tenderloins or a roast.

Moose! Better then any beef or any meat I have ever had hands down. If I can ever find one in Texas I will not have to eat beef for a long time.

I have to echo HunterTed. Nothing tastes better than fried quail. But hold the biscuits - I like mine served with mashed taters and gravy with some fried okra...mmm...mmm

Whitetail tenderloins (not backstrap) fold a piece of onion in a small steak wrap with bacon put on grill. I used to save the tenderloins all year then night before opening day the following year cook them up for the other two guys I used to hunt with. Now I just hunt with my two sons and the tenderloins never make it but a couple weeks in the deep freeze.

My favorite is gonna have to be deer chili...or venison chili for yall politically correct democrats out there! LOL Take a quarter and cut it into chunks mix it with your favorite chili recipe and then for texture and taste, add some deer sausage....man, my mouth is waterin'!

Elk is excellent, then white tail deer. Of course, fried quail and pheasant are excellent as well.

MY FAVORITE GAME MEAT IS GIRAFFE. THE RUMP IS JUST LIKE A ROAST BUT MUCH MORE FLAVOR AND NOT AS DRY. ALSO, SPRINGBUCK AND QUAIL.....

Id have to say moose is really good. Elk aint bad. i love deer backstrap fired with gravy. I love fish all kinds and geese breast cooked right is really good in my opinion

I had always heard that antelope was lousy meat. However, I got one that was great.

Myself, the last couple of years we have been over run with hogs to the point that we put out 5 traps. That's the best meat on our lease. I love that stuff. And it's tons leaner than store bought. Our average hog is about 200 lbs and there's not enough fat for bacon.

as you said it depends on who cooks...i've mainly had Texas wild game and i like it all! i guess if you consider hog it's my favorite then trukey strips

I have a hard time thinking of exotics as "game" animals.
