mine is called caguamanta
put water on to boil, add carrot, onion, chili tree and bay leaves, then let it boil for 5 min add the catfish in pieces wait for the catfish to cook and is ready

Ingredients
* 4 whole catfish, cleaned with head and tail removed * 1/2 cup prepared yellow mustard * 1/4 cup cracked black pepper * 1/4 cup olive oil * 1/4 cup butter
Directions
1. Pat the catfish dry, and spread a layer of mustard over the surface. Place the cracked pepper onto a plate, and press the coated catfish into the pepper so it is well covered. 2. Heat the olive oil and butter in a large skillet over medium-high heat. Fry the catfish for 3 to 5 minutes on each side, or until fish flakes with a fork.

i love it many ways. a new one i tried and liked. season catfish fillets with salt,pepper,garlic,and cumin. lay in a pan lined with foil. place a roasted green chile on top of fillet. bake till almost done. take out of oven and cover filets with a bunch of grated montery jack cheese. cook till cheese is good and melted and take out and eat.

filleted and fried is my fave, trim well, roll in ztarans spiced up with a little tonny's.
Second woudl be blackened, mix cumin, paprika, salt, pepper, red pepper, oregano, tyme, and brown sugar
coat fillet in seasoning, cook in cast iron skillet with butter or olive oil.

Crack an egg in a bowl, cover it in milk, mix it well, dip the filets then roll em in Zataran's lemon pepper. The great departure from the norm is that instead of frying them, I preheat the oven to 450, throw em in a pyrex dish, and bake them ten minutes per side. Can't tell the difference between fried (I can't stomach grease).

This works just as well if not better on Catfish. These are Sandies, or White Bass if you live north of the Red River. Brush olive or canola oil on the fish. Dust them with Zatarians or lemon pepper. These are with Zatarains. Put the oiled and seasoned side down on a hot griddle on a grill. By the time you can brush and season the upside they will be ready to flip. When they flake easily they are ready.

Good ole zatarains crispy southern fry is great with catfish....when I run out of crappie.
I usually place the fillets in Shiner and then roll them in the fish fry.

Corn meal and corn flakes with some assortments of seasoning.. then fry.. then your done

I like fried catfish as muh as anyone but I hate the mess so mine's called
EASY CLEAN UP!
take catfish, (filets are best but it don't matter)place on a peice of foil with edges rolled to make a tray. Add about 4 good dolops of butter. Generously salt and pepper. Throw on grill for a few minutes. Remove and eat. Then relax because you don't have anything to clean up !

Bobby got me started with the French's mustard thing.. Coat lightly with mustard instead of dipping in egg.. Dredge in zatarains crispy southern fry and hit the grease.. Gives the fish a little tang.. MUCH better than I thought it would be! Try it with a few next time you fry some up..
I really hate to do what I am about to do, because it will be very painful for you.

Sprinkle liberally with blackened seasoning then grill/smoke over pecan wood. Baste with a mixture of worchestshire, lemon juice, melted butter. Grill some boudain links at the same time and chow down.
