anyone ever made Posole? or Ceviche? there are twenty million recipes available online but im going to place my trust in someone here on the THF.

Dont be afraid, my recipe is not full of raw items! This is one of the best hot afternoon snacks. I have constant requests for it on coast trips, hiking and camping trips. Best if made ONE DAY in advance and refridgerated very cold.
Ingredients: 6 Roma tomatoes 1 head of Cilantro 2 jalepenos 1 white onion (medium) 1 regular can of kernal corn 1 regular can of black beans 1 pound of small peeled and devained shrimp 2 limes 1 container clamato tomato juice, not Bloodymix 1 one gallon tupperware container
Finely Chop Tomoato, onion, cilantro, jalepenos (no seeds) and combine in a bowl with about 1 tbls of Sea salt and Black pepper. Squeeze one lime over mixture and mix till seasoned.
Empty black beans and corn into colander and rinse thuroughly. Place combo into tupperware container.
In a small pot boil about 5 cups of water seasoned with salt. When water is at a roaring boil, add shrimp in. Boil for 3 minutes, then transfer shrimp to a colander to drain. Then move shrimp from colander to a bowl with ice, to chill for 10 minutes. Make sure to burry shrimp in ice.
Add all ingredients into tupperware container. Add 1/2 - 1 more tbls of salt. Add 1 more tbls of Black pepper. Close container and shake vigorously until combo is well mixed. Re-open and fill container 2/3 of the way with clamato juice and squeeze in second lime.
Refridgerate overnight. Place container in coldest spot of fridge. Enjoy the next day with saltine crackers or white corn chips. You might have to add salt and pepper to your taste. This is the most refreshing dip I've made thus far. Expect to make many friends.

I still make this recipe for almost all my coast trips. Its so refreshing once it gets hot outside. Goes really good with Corona.

I have a Posole recipe at home. I make it for breakfast at work sometimes. If I remember, I'll post it later.
Robert, that dip sounds awesome. I'm going on a turkey/hog hunt this weekend. I may have to make this to take.

sounds REALLY good, thanks... what about replacing the shrimp with some type of fresh fish? im not worried about using raw stuff i know the citrus cooks it

I made this Pork Posole recipe up, and have made it many times for friends and family. I use wild pork for this. I'm not generally good at measuring, I cook as I go, but had to write it down for those who asked for it. You can tweak this any way it works for you- 1-2 pounds cubed pork, floured and browned in dutch oven. Add 1 chopped onion, garlic, stir to soften. Add 1-2 TB ground cumin, stir to coat. Next pour in 1(14 1/2 oz) can chicken broth and 1 (15oz) can hominy with liquid, 1(7oz) can salsa verde, and green chilies if its not hot enough. The liquid will boil and start to thicken. Turn heat down and simmer until pork is tender. You can add more broth if it gets too thick. I serve this over polenta or brown rice, topped with lots of chopped cilantro. We love cilantro, and I put it in the Posole too. Hope this works for you!
