What kind of seasonings would you suggest I have a couple of rear quarters and thought about trying to grind some up?

Made some last week, used thyme, parsley, sage and coriander. Make sure you add plenty of fat. This is a great website to reference...

No. I've tried some different ones, but never mixed them. Windthorst Fine Meats carries the full line. The italian and braut mixes ain't bad either.
