I shot my first limit of geese today, and now I don't know how "the best way" to cook it.

Anyone have any suggestions?

I cooked my first goose last night. Speckelbelly breasts. I soaked them in saltwater to bleed them out a little. Salt and pepper, a little steak sauce and grill until medium. I served them sliced with mashed potatoes and a some extra hot horseradish. chef

slice the breast like backstrap...tenderize...soak in milk..your favorite seasoning.....then fry.....outta this world good

chicken frying is my favorite way for duck or goose.

cut breast into small nuggets and batter with milk, cayenne pepper, and flour.

The way we cook geese at my house:

Soak the breast and legs in salt water/milk - whichever you like

Put all the meat in a crock pot and dump in equal parts of water and bbq sauce until the meat is just barely covered

Cook on low for 6-8 hrs

When cooking is done pull the meat in a bowl with a couple of forks (just like you would do for pulled pork-should be extremely tender at this point)

Now put some meat in between a couple slices of bread, throw some bbq sauce on top and you have the best pulled goose sandwiches in the world!

I need to try the crock pot. But you can cook goose just like duck, they taste the same, just bigger.

Figured I'd tell you what I do with all of the snow geese I kill. If it's not jerky it's just plain ol BBQin.

Breast the geese out. Cut the breast into smaller pieces. The thinner the easier to marinade and hide the game taste. Marinade pieces in this

You can get it at HEB I know. If they don't have his exact one, you can get the "original" allegro marinade instead of the "game tame" Taste about the same.

Anyway it's even better if you tenderize the pieces first. Then marinade overnight. Wrap in bacon with a jalape�o slice if preferred and stick it with a tooth pick. Put on the grill and drink a few cold ones.

I've marinated ducks and geese in all kinda stuff but this allegro marinade wins the competition hands down.

I once fed over 30 guys at my buddys birthday party last year. Some of em were tellin me that they couldn't stand the way duck or goose taste but after trying my recipe they couldn't keep their fingers off.

Let me know how it turns out.

P.S. I've never once had a complaint about it.

If you decide to make thicker pieces just be sure to stab holes in the meat so the marinade can get through. Trick is for the marinade to go through ALL of the meat.
