depends on how I feel and hog size, little eater pigs I do myself for sure. The bigger sows usually to the processor. The big boars coyote/hog bait.

Cost at Rust Processing in Cisco is $75 for standard processing, which includes breakfast sausage.

I do it myself or with my kids/nephews, but then I am a cheap SOB. If you can get an assembly line going it sure speeds the process over doing it all on your own.

I quarter up my own and keep a good supply of ribs, hams, roasts and straps in the freezer. I do take it to a processor I really trust for pan and link sausage, or occasionally to have chops or ham steaks cut.
Took some to a processor a friend recommended once and got back some horrible tasting skanky meat that I know wasn't mine. The one I use now is not the cheapest, but they give me what I bring in. If you process, be picky in who you use.

I took my first hog to a processor in Centerville. It weighed around 200 lbs. All I had to do was field dress it. The processor skinned it, cut it into steaks, and made the rest into link sausage for $110. But if it is a small hog I will process myself.
