First off, I would suggest you remove as much of the connective tissue as possible and then get the meat as cold as possible before trying to grind it or you will end up with mush. If the meat is ice, ice cold, the grinder will cut thru the tissue fairly well but as soon as it begins to warm, it will clog up the grinder and cause your nice ground meat to turn to more of a mushy consistency. Either way, you will probably have to remove the cutting wheel assembly a few times and clean it out, removing the tissue that gets it clogged up. It just depends on how cold the meat is and how much you end up grinding. Commercial grade grinders don't have that issue as bad. You also might want to go to your local grocery store and tell the butcher you would like some beef fat. They will save it for you after the butcher some beef. Add about 10% fat to your ground venison to give it some fat while you cook. Or as some do, you can buy a beef brisket and grind it up and add to it.

I just ground about a half of a trimmed brisket for chili meat. It was mostly frozen. The hamberger grind is tougher to do, but frozen meat helps. Those things haven't gone up much. Mine cost around $85, forty years ago.

I have had this one for about 20 years, http://www.sausagemaker.com/6320032meatgrindercastiron.aspxMotor is only as good as you are, easy to operate and clean. You can get different size plates to grind every thing from fine, to coarse ground chili meat. It is also a standard size #32, which is an industry standard so plates and knives will always be available.

If you are having problems with the grinder not grinding well, and making "mush" out of your deer, then you need to take the places and knoife to a meat market or something like that and have them resurfaced and sharpened. You could throw anything in ours and it will grind it pretty, warm cold or forzen, when the pltes get older and knife gets dull is when it starts making mush.

Cableas has some hand crank grinders under $100.00 in the Christmas catalog. I like that so the meat doesn't get hot. Maybe it's cuz I'm old school? Anyway, there's three sizes to choose from.
