Y'all talked me into to it. Menu tonight is pork short ribs, pinto beans, and potatoes. Prep time is a minimum of 6 beers. Phase I: pull the membrane, use the paper towel as a grip  soaking in cool water with a cup of salt  sear some bacon in the bean pot  garlic powder, black pepper, cumin, cayenne, bean spice  swab with italian dressing, rib rub liberally, whole black pepper coarsed  bring water to a boil and throw the seasoning in, roll beans for a 45 then let simmer for an hour  using hardwood chunks, mesquite chips and a small piece of oak  use evo or spray on grill and grate, leave vents open for now  to be continued....

pulling the membrane, yes sir! ok I got lazy on pics for phase II: wifey skinned the taters for me, put the taters in a foil pan with some butter/salt/pepper to start, covered to cook, will add cheese and sour cream at the end, the bacon wrapped peppers are store built (heb) one is sausage and two our cream cheese filled, went ahead and semi-wrapped the ribs in foil to keep them moist, fire is medium heat with maybe an hour to cook, btw - moved on to crown as an appetizer!

phase III: appetizers:  put a little stubbs on before I pulled them off, when they start showing some bone on the ends they are getting ready, let em set for 10 minutes before cutting, wrapped the other two racks up for a snack on 9/1  added mexican velvetta, shredded cheddar, bacon, crouton crumbles and sour cream to the taters  a little stubbs drizzled and chomp!  eat your beans and taters baby, MORE RIBS DADDY!
