Does anyone have a good stew recipe?
We always do a local stew cook off, to help the Ag kids, and the fair.
We always place somewhere around 5th. This is for bragging rights, and I can't figure out what to add or do, to make it over the top.

Any suggestions?

i always use beef ribs for the stew meat........i just go down and get my buddy to slice them up for me whatever size i want down at the butcher shop.....best stew meat ever...makes a huge difference.....c'mon winter

give me over the weekend...my MIL makes some that is out of this world, I'll have to suck up and see if I can get her recipe.

I HAVE A RECIPE I CALL POOR MAN'S STEW:
2LBS STEW MEAT - DREDGE IN FLOUR & SEAR IN A LITLE OIL IN A LARGE POT. AFTER IT'S SEARED TO A GRAY COLOR POUR IN 2 OR 3 CUPS OF BEEF BROTH, ADD ONIONS, MIXED FROZEN VEGETABLES, FROZEN OKRA. BRING TO A BOIL THEN REDUCE TO A SLOW SIMMER FOR A WHILE UNTIL THE MEAT IS TENDER. YUMMMMMMMMMM! AND EASY

Mine is really basic. This started off just as a fun day, to help raise money, but now it is an all out war.

Ingredients

stew meat, cut into 1 inch cubes
cup all-purpose flour
teaspoon salt
teaspoon ground black pepper
clove garlic, minced
bay leaf
paprika
Worcestershire sauce
onion, chopped
beef broth
potatoes, diced
carrots, sliced
corn, peas, green beans, sometimes put okra in there
We have to make a minimum of 5 gallons, but usually try to do around 8

Needs cabbage. You could throw a couple ox-tail in there for some added beefy flavor. A little bit of chili powder would be good. I also would put a touch of cumin. Not to make it like chili, but just enough to add some smokey flavor.

try those beef ribs when you get a chance......i guarantee you wont want to use anything other meat for stew again

Do you de-bone the beef ribs before you toss them in there, or do you pick the bones out after it is done?

i wash the ribs really good before starting the boil because there can be some grit from the meat saw on them.....usually all the bones will fall out and leave you with the best tasting flavored stew meat and it only takes a couple of minutes to get the bones out. in the fall when we head to deer camp this is all everybody wants me to make (about 60 people)and it more than does the job.

i boil mine for a couple of hours with some spices then i add my potatos, carrots, onion, garlic, celery........what i also do in another pan is make a roux with some oil and flour and slowly get it the dark color i want it to be then i add that to the stew................that is what seals the deal on the stew right there.........let that settle in with all in the pot for around 15 minutes or so and youve got stew that people will want to lick the pot over!

try adding cambels tomato soup to the mix. I do this and it makes a huge difference.
