Any easy way to make good Duck Jerky? I don't have a smoker. Can it be made easily in a regular oven?
Any other ways to consume these things would be helpful.

I make jerky from deer/duck/goose all the time! No need to go out and get anything special to make it. Local grocery store has all the ingredients you need!
1) Take out breast meat from freezer. Allow to thaw some what, you still what the meet some what frozen. Take a fillet knife and slice off meat real thin!! Place meat in non metal bowl and wash!
2) Get your ingredients ready, Low sodium Soy Sauce / Teriyaki Sauce / liquid smoke / Brown Sugar / pepper / red pepper flakes / garlic powder . Combine all this into the bowl with your meat and seal, place in fridg for a day. I make jerky with a dehydrator. It takes any where from 5 to 8 hours cook time.

Duck Jerky...never made it but sounds like something my boys would eat up. Here is a recipe that sounds a lot like the one TH posted just a little more detail.

Thanks for the tip Heat...I'm getting the wife a dehydrator for Xmas (yes she really wants one...so it's nice to get her something I want as well)
